Chicken Fillets Saltimbocca
Chicken Fillets Saltimbocca will make any thought like “oh no, chicken once again” vanish for ever.
Treating a simple chicken fillet as if it was the Italian Veal Saltimbocca will definitely make you and your guests feel very comfortable.
It is simply chicken fillets, parma or iberico ham, lemon zest and sage or rosemary.
In the photo on your right I used rosemary. The original Saltimbocca recipe goes with large sage leaves.
I had one chicken fillet per person, but if the chicken is big, you can slice the breast in smaller pieces as well.
How to do Chicken Fillets a la Saltimbocca
Serves 3-4
3 chicken breast fillets, serve 1 per person, otherwise divide them into halves, easier to serve for guests
A slice of parma ham for each fillet
Lemon zest from 1 lemon
Sage or rosemary
Olive oil
Salt and freshly ground pepper
Small pins for fastening the layers
First of all beat the chicken fillets flat with a frying pan. Put a layer of cling film on top of the fillets before beating. Ensure your neighbour is not a nervous type of person 🙂
Rub the chicken fillets with olive oil, and add salt and pepper. Place sage or rosemary on the fillets.
Put the shredded lemon zest on the fillets, and finally place a slice of parma ham on top and fasten it with small wooden pins. One in each end would do.
Fry these chicken fillets for 2-3 minutes on each side. Serve with salad and grilled vegetables. Remember the homemade Mayonnaise as well. Another side dish that would suit this well is Smooth Avocado Cream. Enjoy!!
